Looking for a new GPU for 1080p gaming in high quality. Is the RX6700XT a good choice?

I'm currently using a second hand GTX1050ti (Yeah, I know lmao), and the next big games I really want to play are Baldur's gate 3 and Starfield.

My other specs are quite beefy, since this is also my work computer: Ryzen 9 5900X 64GB RAM ddr4

My monitor has a 1080p resolution, with a 60Hz refresh rate and I'm pretty happy gaming with that. Would an rx6700xt suffice? Is it overkill or just barely enough?

For 1080p/60Hz that build is overkill. I especially don't see the point of getting 64GB RAM for just gaming. The videocard is going to be more than fine for years to come if you don't plan on upgrading to higher resolution or refresh rate.

You misunderstand, these are the specs of my current pc, which I'm using for work at home. I also want to use it for modern gaming, which I can't really do with a 1050ti, so I want a new GPU.

Oh got it, I edited my comment almost immediately but yeah that card is absolutely good for 1080p/60Hz and probably more. I'm currently using 5700XT with a weaker overall build and I have no problem running most games on 1080p/144Hz near the highest settings.

If you're not planning on upgrading, or don't need a superpowered video card for work, you could definitely save on the money. I am using a RTX 2060 Super (your choice is comparable to the 3000 line from Nvidia) and playing all games I want to play in high quality at 1080p 60hz and good fps.

The 5000 and 6000 series cards are really quality, and it's hard to go wrong with them. The 6700XT is definitely a great card.

I have a 6800XT (1440P/144FPS targets), but before that I was using a 5700 (non-XT) and was hitting 60FPS @ 1440p just fine in most games. If you have the money to spend, I think the 6700XT is a great pick for you right now, and will future-proof your build for a good while into the future.
