I use floccus. Works with nextcloud or any webdav, even gdrive.
One big DB will be a single point of failure. You will not benefit from much more speed, the only thing which is "easier" is backup.
I use different DBs for different stacks. If one hangs up or messed up completly, it won't affect others
Multithreading is almost impossible with only a few cores. It is barely enough to run Windows π₯Ί

I tried Arctius, it looks good but misses a few features. Maybe I give it another try in the future.
I use Liftoff, it is good but the design is a little bit boring, but Liftoff is very useable as a daily driver and works fine.
I discovered Connect yesterday, it is a good match if you want a good design and features. It has a new post button like Liftoff. I like this. Connect seems to be a good match for me.

I am using nextcloud for years now with postgres, redis and configured PHP setttings, but I installed it on the host. Never had any problems, Performance is awesome... Almost everytime I read about problems is with the docker images. The new AIO image shall be bad too, but I can not say anything to this, since I don't use it.
I really like docker, but sometimes it is better to install on the host directly or use an LXC if you need isolation. MinIO is the same... Would not want it in a Container
Maybe seafile could be an option for you π€

Never had any breaks with immich. Immich libary is backuped daily to external provider. Data Retention is managed by them, so I only need to run my scripts.
The libary (upload folder) is the only thing you need to backup. I don't think it is more complicated than any other folder with subfolders. You can always start from zero
I use rclone for automatic backups from my server, Immich included π±

I used FreshRSS but switched over to Nextcloud news. Works good for me π
Used Clementine before and switched to strawberry because it is an active project. Changing was easy, they are very similar π
Had a mini heart attack as my Cryptpad told me password or username wrong, but I use a pw-manager. There are important documents in there and there is no "forgot password" function.
Solution was, I copied a wrong password to Cryptpad in Vaultwarden. Thanks to the password history of Vaultwarden, I found the right one and got logged in again π

Docker has it usecases but I don't need everything in there. Like I said MinIO for example is just a short oneliner to start.

Okay this is easy too to set a hostname on debian or ubuntu Container:
hostnamectl set-hostname myname
Wordpress with activity pub runs fine. I use it too π
I have done it this way with Vivaldi:
Sync to Browser
Reorganize in the Browser via drag n drop
Sync back again
It took about 1,5 hours but you only do this once.
In my opinion the best 2FA is a yubikey. They have an TOPT app too, but I prefer webauthn.
