I've been running Arch on my servers for over a decade now and never had issues. I think people have a perception that it's not stable or it randomly breaks but that's not been the case for me.
Love this one from Carmageddon

I was hoping to see this comment. I actually played through it last week. What a great game. Too bad the GBA sequel was trash.
Right? That's why I shared it. This was phenomenal.
And if history is any indication, they will likely get it
We use Matrix (Synapse) and it works extremely well. I just wish I could get a STUN/TURN server working...
Consider checking out XCP-ng. I've been testing it for a few days and I'm really enjoying it. Seems less complicated and more flexible than Proxmox but admittedly I'm still learning and haven't even tried multiple servers yet. I would suggest watching some YouTube videos first. Good luck!
Here's their documentation. The tip suggests it may have been harder in the past but it doesn't seem too bad now. Hopefully this is configurable in Xen Orchestra in the future.
Hmm... It loaded just fine on my Nvidia Shield.
I tried setting up coturn with docker but I can't remember offhand what I had issues with. I am running a reverse proxy (Traefik) with wildcard certs. I should dig into it again. Do you happen to have any pointers or any good guides I could try following?
You can use HACS in Docker. I definitely had that working in Docker before I moved to Home Assistant OS on a dedicated machine. You're right about add-ons though, maybe you had the two confused?
