Ubuntu has gotten worse that it seams to was a few years ago. I didn't use it outside of servers. Many don't like the direction that ubuntu goes with snaps. But use whatever distro you want

Yes it work with English content very well. You can rerout all your audio to it via helvum. The big problem is that it only has 3 languages supported English, French and Polish. So it technicality works but not in German unfortunately. But I can say now it partly works on Linux.

I would recommend using librewolf thorium for normal task and if the site doesnt work with it i use thorium. Librewolf is slower than thorium but it is for me the better default version of Firefox. Loading yt is really slow with librewolf so I use freetube or invidious to watch content.
You can even sync it with KDE kasts but not with Podcasts by GNOME :(
Thats the reasson i use hyprland at work Gnome, cinnemon and kde are really nice but monitor independent virtuall desktops is a must for me

I would recommend Peropesis to you as a minimalsitc distro but the dual booting process will not be as easy as mint you also can try to use a distro with xfce desktop environment but I would say that 30 GB aren't much anymore and you should think about upgrading
