The only thing that is FOSS and self-hostable I've found is Reactive Resume, which is terribly documented, and without AI support.

What are you wanting an AI to do? It's really unclear from your summary.
I think that they are looking for a resume builder, but I have no idea why AI would be involved.
Because AI can be very good at things like that and it's often something that people struggle with on their own?
