Seriously, there's so much for me to do that I could work OT for the next year and never once have a time where I was ever "done with everything".

Send them a heads up email, that you know have a hard time writing the email and you know they can do it.
I will set a up a 3 hour workshop on writing your emails with chatgpt instead of procrastinating.
