Workaround is to buy a DisplayLink dock which can run three monitors, insane that you have to use a third party solution though

My 6-year old PC can’t run Windows 11.
Apple has some of the longest lasting software support in the industry.
If a 6 year old PC that cost as much as an Apple 6 years ago can't run Windows, you got ripped off.
I assembled it myself. It was more expensive than my M1 Air. It’s still a great machine.
Microsoft just doesn’t support my CPU (i5 6600K) for some reason.
It would probably run Windows very well if it was supported, I have no reason to think otherwise.

A few years ago, I used dosdude's "patcher" to install 10.13 on a pretty old MacBook Pro that couldn't run it. It's been working really well. I think "OpenCore" might the more modern version of this. Worth a look?
