Well, not in most of europe, and only as some local traditional recipes.
There was a time when it was the coolest snack to have at school in the US. Very popular. And it is still certainly a thing for kids nowadays.

You can try that argument with kraft singles or Velveeta, but not with string cheese.
Also, kraft singles and Velveeta are actually kinda real cheese, iirc the reason why they aren't allowed to be sold as such because they contain a significant amount of added fats, oils, and other things to make them softer and more gooey. However, they still contain a significant amount of cheese.

Yeah American cheese is typically real cheese, extra milk, and an emulsifier to keep the milk and cheese cohesive. Cheaper stuff can play it a bit more fast and loose but even singles the first ingredient is cheddar
I would also like to add that anyone who dismisses all American cheese outright due to trash like Kraft Singles and Velveeta are missing out on some of the best sandwich cheese you can get.
